Fennel is part of the carrot family and it originated in the Mediterranean. All parts of the plant are edible: while the hollow fennel stalks can be a bit tough, its edible white bulb is treated as a vegetable and its leaves are used in dishes all over the world.

Fennel has a refreshing licorice -like flavor. Its sweet taste and crunch make it popular in raw dishes and antipasti. Cooked, the bulb mellows even more, losing its bite and gaining a little sweetness.
